Baked Macaroni Western Style Specials

Prepare:
2 cups macaroni, cooked
1 1 / 2 cup milk
3 tablespoons light cream
2 tablespoons butter
2 tablespoons flour
2 cups Cheddar cheese, grated coarse
1 cup tomatoes, roughly chopped
3 tablespoons green chile, cut into small dice
1 / 2 teaspoon cayenne pepper
Salt, to taste
How to cook it:Cook macaroni according to package directions, drain well.
Meanwhile, warm the milk and cream in small saucepan over medium heat, or in a glass measuring cup in microwave oven for about 2 minutes. Do not let boil.
In another saucepan, melt butter and add flour, stirring until a paste forms. Pour warm milk into the butter mixture and cook, stirring constantly, until thick and creamy. Add cheese gradually, stirring until melted. Stir in tomatoes, chile and spices.
Mix macaroni and hot sauce, mixing well. Pour into dish, buttered 2-quart casserole.
Bake at 400 degrees F was found for 35 to 40 minutes, or until top is well browned.
